Cast Iron Beans & Cornbread
In a cast iron dutch oven, a little bit of oil in the bottom of the pan add 1 whole onion, chopped cook until the onions are done then add rinsed beans.
1 can-black beans
1 can-navy beans
1 can-pinto beans
1 can-kidney beans
1 can-chili beans(do not rinse)
Add water to cover the beans and bring to a boil. Turn down to a simmer for about an hour stirring occasionally.
Cornbread from scratch
1 C Flour
1 C Cornmeal
1/2 C Sugar
4 tsp baking powder
3/4 tsp salt
2 eggs
1/4 C oil
1 C milk
1 can of corn or creamed corn(optional)
Mix all of these in a bowl and pour into a 13 x9 greased pan
Bake in 425* 23-27 mins
