Berry Cobbler

 Reading blogs the other day ran across a recipe that I had to try: Berry Cobbler by the Mennonite Girls here is my version and I am proud to say "YUM" here is a copy of her recipe Ingredients 4 cups berries ( a mix of blueberries, blackberries, raspberries) (I thawed a bunch from the freezer) 6 Tbsp sugar 2 Tbsp cornstarch 1 Tbsp lemon juice 1 1/2 cups large biscuit mix 1/3 cup sugar 1/2 cup milk ( a little more if preferred for easy spreading) coarse sugar for sprinkling (optional) Method: Combine frozen or fresh berries with sugar, cornstarch and lemon juice in a medium pot and cook, stirring as needed, until boiling and liquid is clear. This takes about 5 -10 minutes. Pour into small Pyrex, stone or glass bake-ware to serve about six.  Combine biscuit mix, sugar and milk and stir until combined.  Scoop onto fruit by large spoonfuls. Sprinkle with coarse sugar. Bake at 400 F for about 25 minutes, until golden and bubbly. Let c...

  Well I am glad you asked! Looky Looky see what we got done........isn it pretty?! Beets planted yesterday and today will have peas & lettuce planted...... This morning I had some fruits thawed out from the freezer that needed to be used.....pie crust (store bought...was given to me) baked for 20 mins then wrapped the edges with foil when I put it back in the oven with fruit( peaches, blueberries, blackberries, mangos, pineapple) and crumble(butter, splenda brown sugar, oatmeal) topping. Split Pea & 30 Min Rolls

Inspired to make when I read Bacon & Eggs the other day. She had these fabulous 30 min rolls (I made mine with Whole Wheat Flour) that I just had to make which by the by they came out delish! Thank you Sci-Fi Chick Now let's "crack on" , I made Split Pea Soup to go with them. I had some split peas in the pantry for who knows how long (thinkin 'bout 4 yrs- :)) I rinsed them in warm water a few times more like soak and drain for a few minutes but you get the point. I cut up a half an onion, handful of wee carrots cut-up, 2 tsp of minced garlic, pinch of parsley flakes, pinch of basil, 2 tsp of cajun seasoning. Started cooking about 1/2 lb of bacon and added the (above) onion to this, cooked until done. Added all the ingredients above to the slow cooker, crock pot, then added 2 1/2 quarts of water turned on high and cooked for 5-6 hrs. Yesterday I was over at "The Rehomesteaders" Blog and she had a recipe on there that I could not resist making called " Cinnamon Roll Quick Bread ".  I copied off the recipe and this is what I got..... Recipe at the bottom of this post taken directly from Rachael's site..... Mine did not come out like her picture looked but it is delish!  RECIPE:   Ingredients : Bread 2 cups flour 1 Tablespoon baking powder 1/2 teaspoon salt 1/2 cup sugar 1 egg 1 cup milk 2 teaspoons vanilla 1/2 cup plain greek yogurt or sour cream Swirl Topping 1/3 cup sugar 2 teaspoons cinnamon 2 Tablespoons water Glaze 1/2 cup powdered sugar 1 Tablespoon milk Preheat oven to 350F and spritz a bread pan with cooking spray.  In a large bowl, combine flour, baking powder, salt and sugar.  In a separate bowl, combine egg, milk, vanilla and yogurt/sour cream.  Mix wet and dry ingredients together.  Pour into greased bread pan.  Mix t...

Start with 1lb. ground sausage & 1lb. ground burger, mash together Use a 9x13 pan Smoosh meat into pan & Add a sprinkle or two of basil on top .....Bake in 350* oven for 40 minutes or until meat is done Add tomato sauce or pizza sauce and cheese then whatever toppings you like....stick back into oven.. bake until cheese is melted....
