Coconut Cream Pie

Today's Blog I  picked out this recipe here before the cool whip was added This actually was a very simple and easy recipe. Stirring constantly while on the stove was the important part of making this pie. I would recommend making this the night before you want the pie as it has to cool for 4 hrs before adding the cool whip on top. You can find the recipe above but for good measure I will add it to this page 1 C Sweetened flaked coconut 3 C half n half 2 eggs, beaten 3/4 C sugar 1/2 C flour 1/4 tsp salt 1 tsp vanilla 1 (9") pie shell 1 C Cool Whip, thawed Preheat oven 350*....Spread the coconut on a cookie sheet and bake it until golden brown, about 5 mins. In medium saucepan combine half n half, eggs, flour, sugar, salt and mix well. Bring to a boil over low heat, stirring constantly. Remove the pan from the heat and stir in 3/4 C of coconut and the vanilla. Reserve the remaining coconut for topping. Pour the filling into a BAKED pie shell and chill...

Return To The Farm

Diagnosis Update: Severely Sprained Ankle & A Possible Broke ACL (waiting to get the MRI for verification) We came home to the farm yesterday after spending our time at his folks since Christmas Eve. Our house wasn't ready for an injured individual yet but we are set now! Today FIL, MIL and I worked up some wood for our coming weather tomorrow and this weekend. Emptied the hot tub as the chemicals were affecting me in a negative manner. We have opted to go the H202 way for now. I purchased what's called 35% Spa Science to add to our spa. So today I cleaned it with this then added new water, filter and H202. It is warming up once again so maybe tomorrow evening it will be ready for a dip. Over the Christmas holiday I made a Coconut Cream Pie that was quite yummy! It was devoured by the company of 21 people there. Our Christmas this year came in with a BANG! To start a friend of ours broke her leg just above her ankle so she was out of commission for Christmas Supper then we got a message that other friend`s fathers were both in the hospital. His father has heart issues and her father was being sent home for hospice care. When we left Christmas Eve I decided I better pack a bag as we didn`t know if maybe things would progress with either father. What I didn`t know is it wasn`t them we had to worry about, it would be Mtn Man. He had an injury of the knee from this last June from a cow kick and we were in the process of getting a surgeon to fix it. Well Christmas Eve I hear Mtn Man screaming for me and I ran out of the house to find him bouncing around holding up his leg. What happened? He fell out of the truck bed...he was emptying heavy things and one of them caught him and out he came. Blowing out his knee as he fell! Off we flew to the ER to find that he has a broken bone, bl...

Cast Iron Beans & Cornbread

In a cast iron dutch oven, a little bit of oil in the bottom of the pan add 1 whole onion, chopped cook until the onions are done then add rinsed beans. 1 can-black beans 1 can-navy beans 1 can-pinto beans 1 can-kidney beans 1 can-chili beans(do not rinse) Add water to cover the beans and bring to a boil. Turn down to a simmer for about an hour stirring occasionally. Cornbread from scratch 1 C Flour 1 C Cornmeal 1/2 C Sugar 4 tsp baking powder 3/4 tsp salt 2 eggs 1/4 C oil 1 C milk 1 can of corn or creamed corn(optional) Mix all of these in a bowl and pour into a 13 x9 greased pan Bake in 425* 23-27 mins Copyright © 2013 M.E. Baked Acorn Squash

I like variety so when I bake Acorn Squash I bake 3 at a time. I split them in half.... (1) set I spread butter on the meat part, (1) set I spread butter and sprinkle brown sugar on them, (1) set I lay mozzarella cheese on it. Updates From The Home Front

The phone company (AT&T) finally made it out here to install our phone system. 5000 ft of phone line installed in the ground to our house. We got a phone and no dial tone! Figures.....so hopefully we can get "Hanzi" out here to get the phone working. Last night it decided to rain and rain it did...it is still coming down! We are planning on going for a walk after while to see how the creek looks. When we came up the drive last night a lot of it was covered in water already....Yes, Lots of Water! Copyright © 2013 M.E. Cranberry Pork Chops

This was entirely an experimental meal which turned out really good. Lay your pork chops in a 13 x9 pan for the 350* oven. Bake for about 30 mins then add about 1 full onion chopped, 2 cans of sliced mushrooms or fresh if you like, about a cup of craisens (soft cranberries that have been dried) add enough water to the pan that it fills to about 1/2 way up the pork chops.  The meaning of "impression" taken from online dictionary An effect, feeling, or image retained as a consequence of experience.  I received an email today from a dear friend, that made a huge impression on my life. It turns out that I in return did the same for them. His exact words " You made a deep impression on us because you let God get you beyond some pretty bad circumstances." I guess my point is that no matter what you think or over think what they are thinking, you may not know it but you are making your mark on someone. What you do MATTERS!! Sausage Stir Fry

Not interested in Recipe then go to Today's Blog ....Be sure to read the funny at the bottom of today's blog..guaranteed to laugh! The last few years we buy sausage from a local church here in Missouri. They have a set up in their garage that is clean and efficient to process their sausage. The guys get their boiling buckets out, their sausage makers out and meat grinders and off they go processing the many pigs they get. They sell it in links and bulk both. So this morning I cut out a lb.(pound) of sausage and fried it up in the pan Then I add some vegies any kind that we are in the mood for...this morning it was a head of broccoli, 1/2 onion, 1/2 large green pepper and about 5 whole mushrooms, all cut up into bit size pieces. I had a big ladle spoon full of rice left from last night's supper so I added it too. And then cooked it until the broccoli was soft. Don't want to overcook your vegies or they lose their nutrients. Tilapia, Shrimp & Broccoli Rice

Recipe: In a deep skillet melt 1/4 C of butter, 1 onion chopped, 2 Tbls of minced garlic cook until onion is done then add frozen fish fillets, shrimp until pan is full. Turn down to a simmer until the shrimp are done thru. Add seasoning of your choice. In a pot add 1 C of rice to 2 C of water , slab of butter and one broad head of broccoli chopped into little pieces. Boil then simmer just like any other time you cook rice. Weekend Out!

Saturday night we decided after finishing the deck for the most part that we deserved to go out and have a bit of fun so we headed to the local Winery & Bistro.  Durso Hills Winery & Bistro Quaint little place in the town of Marquand. The actual winery is on the hills to the east of the town and the hangout is in the historic Homan Hall. We had supper and couple drinks which was good. If you are expecting a California Winery experience just tone it down a bit this is Missouri. They had a female singer up in the front of the hall playing for the supper crowd. Very nice place to just hangout! Did find out however that the cook that owned the Hideaway a few years back is now cooking for the Winery. Funny how things are... If you find yourself touring the wineries of Missouri...have to stop in at this one...... Sunday we hit another winery over East of us called the River Ridge Winery in Commerce, Mo. We had fun here! Finally!!

Mtn Man and I went out late morning and started rockin' on the deck to either use up all the wood or get it finished. Well we ran out of wood first but we did get the hot tub ssssseeeetttt!! It has water in it as we speak but things are a bit frozen we think so hoping the warmer water will defrost things a bit so water can flow. Praying they will!!!! Truly I am not just sayin that!!! Christmas Bark

 I tried the recipe from Ozark Mountain Family Homestead and first off this recipe is really easy to say the least. Very Very Tasty!! Salty & Sweet, Buttery & Chocolatey.... I did do a couple things different in that I split the recipe in half as I had a smaller oven and pan. I used crushed peanuts as a topper. Oh and caution on the butter/brown sugar mix..DO NOT LEAVE IT ALONE. Constantly stirring is required and a timer!!! Jus sayin'! Once you get things right this recipe take no time at all to make...I think the longest part was the cooling process which I used my fridge for that.  Today's Blog Here Copyright © 2013 M.E. Early Christmas Present

My thoughtful husband bought me a new camera-Canon Powershot SX50 for Christmas. And no I could not wait until Christmas to open it. Hard to surprise me really although he has managed to do that a couple of times I have to say. My other camera-Kodak EasyShare ZD710 10X has been a great camera but it is pooped. It has started acting up doing things like when shut off it stays on then when you turn it on it shuts off. Have to remove the batteries to reset it's brain. Lens is scratched in one spot. And sucks on batteries(AA) so much that every 20 pictures I have to add new batteries. Thought about taking stock out in the battery company but thought it might be cheaper to buy a camera instead. Thank you hubby!! Weather today is dreary....icy, sleet and some mixed snow. Hubby was trying to finish the deck but not in this slick stuff. So maybe in couple days.........The Devil is working hard against this positive in our lives. At least that is what it feels like....we have had bad ...
