Muffin Blunders

Woke to cool temps this morning which was a welcome change to the blasted heat and humidity we have had as of late. It looks like our temps will be dropping after today with highs in the 70's and lows in the 50's. Happy Dance!!! Before I forget I planted another row of beets today.... the last of my package will have to buy more for next season. Mtn Man rototilled it all up and weed eated the edges. It looks fabulous! ********************************************************************************** For breakfast this morning I wanted something different so I decided to make this breakfast muffin I saw around the internet. Pancake muffins was the choice so off this one site called myfridgefood.com just said use pancake mix (I used my baking mix found on my recipe link tab) and bake 425* for 8 mins and they should have a bowl affect when they bake so you can fill them with syrup or jam etc. Well I tried with and without egg and no bowl effect so then I decided well maybe...

Redneck Squash Risotto

I have a lot of squash and went looking for a recipe for it. We have found the recipe for us... so good!! found here:  http://allrecipes.com/recipe/butternut-squash-risotto-2/ I changed mine a bit... I used everyday white rice, what squash was on hand don't have butternut and I used a bottle of corona beer for ours. Next time I do believe I will cook the rice a bit until it is just about done then add squash and such ...... more cheese.... this dish was great!! UPDATE 8/30/14 ---I made this again except this time no beer. I put oil in pan then a cup of rice, onion and fried a for a couple minutes then added 2 cups of water let that simmer until rice was cooked. In the meantime I prepared my ripe squash chopped in chunks and added to this mix with another cup of water stirring(just so the rice doesn't stick to your pan) and setting letting the squash soften. I used a potato masher to mash the squash in the rice let that cook for another 5 mins. Turned it off and added shredd...

Garden Work & Rewards

We both worked ourselves silly in the garden but it looks damn good if I do say so myself! We Rock! Before After ******************************************************************************** We are getting a bit of everything out of the garden now. While staking up the tomatoes again I found quite a few ripe tomatoes some are edible while others I threw out.  No peppers yet but did pick our first okra today. Broccoli is still coming on so is the cabbage. No brussel sprouts yet truthfully, not sure we are gonna get any. Something has ate one of my rhubarb plants so now down to two. The blackberry plants I planted are growing well. Lost a raspberry plant, but the grapes is fabulous to have to tie one up today. Canned one quart of carrots & beets yesterday which was all we had in the garden, think I will plant more shortly for fall. Beans are still coming will can them up tomorrow hoping for a full canner. ****************************************...

Let The Chicks Out!

Wahoo! They are free birds finally !!! First we had to add a bit of chicken wire around the bottom of the fence so we don't hopefully fingers crossed have any mishaps. I can see it now, Peanut is trying to corral them and they are runnin for their little lives oh, not good ending ! Then Mtn Man made a ramp for them that is removable which will happen every night to hopefully keep big critters from getting to the locks.  Then we clipped one wing cause they are flying now. Again for no mishaps! One wing so at least they can still get a little lift when they have to. Open the door and they were little hesistant to leave but with a little encouragement they left the coup . It has been so hot they needed to get out of the coup in some real shade where they can peck at bugs and the grass. ******************************************************************************** Yesterday I worked a bit in the garden again. Broccoli Salad & Garden Goods

My Broccoli Salad is not exactly like my mother in laws (my fav) but it comes a close second to it!  Recipe: 2 large heads of broccoli- cut into bite size pieces ( flowerettes only ) (some use cauliflower too) 1 large onion 1 cup of craisins 1 cup of raisins nuts are optional Dressing: 1 cup of mayo 1 cup of sour cream couple teaspoons of lemon juice 1/4 cup of sugar Mix everything together real good and let sit in fridge for at least 3 hrs before serving. Usually good to make the night before but hey some of us aren't that prepared.... . do the best you can it is still really good!! ********************************************************************************* Garden Updates: The tomatoes are coming on.... have some that will be ready in about another week. The squash & melons are putting on babies.... Picked a large bowl full of snow peas intend on freezing them. The beets are ready to be pulled, the kolhrabi is ready and pulling the on...

So Much To Share

Ok so we have been so busy like so many of you have!! Finally had the chance to get the garden planted!! Thanks to my hubby (yes, he planted) Wahoo!!! 60x70 planted, now it is up to God to make 'er grow!!!   This is probably going to a long winded blog this morning as there is so much to share! About a week ago we went for a visit to a friends place in the woods ( Zalma, Mo ).  They own a little cabin right next to the Caster River and it was a lovely little cabin.  Made out of pallets! While visiting we walked over to see the " Rookery " of Blue Herron's . They were awesome! They look like some prehistoric bird and then up above ya flyin round it is somethin to see! Foot bridge they made to walk over Nests in the trees Blue Herron Never seen anything like this in my travels. What a treat! Went riding (short ride) but a ride nonetheless!    Had some storms come through that lef...
