I was browsing through Facebook (FB) this morning and found this awesome video that every woman should watch. Taking to heart what she is saying. Come on we all at some time or another felt this way or have in the past.

Thursday was the home premiere by invitation only of this movie which was filmed right close to us in Cape Girardeau. I look forward to the release on DVD. I bring it up because it is the talk of the town locally. Lots of scenes from Cape in the movie..... take a look for yourself on the bio...

Fall is such a pretty time of the year...am loving all the colors!

I was given some apples (15 lbs), they came from JG. When we attended the church festival at his church in St. Louis he took us around on a private hay ride and showed us the grounds of the church. I noticed that the apples on the trees were ready to picked. Surprised nobody hadn't gone out to pick I mentioned I wish I had brought couple five gallon buckets to pick, I don't like to see fruit go to waste. Well, his grandson got up in the trees and picked us some apples. So grateful!! So I peeled, cored and cut them up. Put them in jars and added a pie filling sauce over the top. Water Canned them for about 30 mins...they sure turned out pretty!

Had a bit extra leftover. Made my mini pies (have to scroll down the page for the recipe) for us last night .... little hot pockets of gooey yummyness ( this is not a word but I don't care). Recipe below...

Depending on the size of apples, mine were homegrown organic apples, you will need 7-9 lbs to make 7 qts or a full canner. After you peel, core and cut apples put into jars.

Get your water bath going in your water canner... you want it hot so your jars don't break when you add them to the pot.

In a large saucepan add 4 1/2 C Sugar, 1 C Cornstarch, 2 Tsp Cinnamon, 1/4 Tsp Nutmeg, 1 Tsp Salt and 10 C Water. Cook until thick and bubbly then remove from heat. Add 3 Tbls Lemon Juice, Mix. Ladle Syrup over the apples. Wipe your rim add your hot lids.
Water bathe them for 30 mins.... make sure you are timing from the time you have a rolling boil!!
Once the timer goes off...remove carefully and set until cooled. Hopefully, they all POP!

Ps... you probably will have a bit leftover....this sugary syrup is good for the above pies or can use on morning waffles/pancakes/french toast.
