Mexican Cornbread Casserole-For You Sandy!

In the post listed below I had a casserole there that I promised I would get the recipe for

350*  35-40 mins  Greased Pan

1-2 lbs of ground meat
1-2 packs taco seasoning mix (add one for every 1lb of meat)
2 boxes corn muffin mix
1-14 oz can of cream corn
1-14 oz can of kernel corn, drained
1 1/2 C shredded cheese
1-4 oz chopped green chiles, drained

Brown the ground add taco seasoning per package directions.

Mix the corn muffin mix per directions. Stir in half of cream and kernel corn.

Spread half of the corn muffin batter in the greased baking pan. Top with the meat. Spread remainder of cream corn and kernel corn over the meat. Sprinkle half the cheese then the green chiles. Spread the remainder of corn muffin batter on top then the remainder of the cheese. Bake for 35-40 mins until cornbread is baked through. Let stand for 5 mins.
This does make a great leftover too!

  1. I have made this for many years. One of the 1st recipes I got from my MIL (one of the greatest cooks ever!). The other one was "Dad's Special" which we still go to from time to time. Hamburger,onions, thyme (for some reason the thyme really makes it), mushroom soup mixed w/a bit of milk. All stirred together with cooked pasta & cheddar cheese & baked a bit & then topped w/more cheese & baked until perfect. I do plan on making this w/homemade mushroom soup mix, to make it a bit healthier. Gut, gosh darn it's good

  4. This is so good but I'd definitely make it with the 2 lbs of meat instead of 1. I'd also top it with a little bit of sour cream. It was so good though. Thanks for sharing!

  6. Marche darling....I would suggest moving it up a rack and letting it bake just a wee longer until it is done in middle...or using a more shallow dish the next go round! I hope this helps!

  7. Add a can of Ranch style beans, grated Mexican blend cheese and then pour the cornbread batter on. Yum!
