Loaded Chicken Enchiladas With Corn Tortillas

This is one of those dishes that you could prepare ahead of time and then throw together just before you put in the oven for 30-45 mins in 350* oven...
4-5 chicken breasts, chopped
2 cans of Black Beans, rinsed
4-5 green onions, chopped
1 can of olives, sliced
optional item ..fresh mushrooms about 6 sliced
1/2 package of corn tortillas ( already cooked up in oil and drained)
2 qts. of salsa
1 lb. of shredded cheese

I cook the chicken, black beans, green onions, olives, mushrooms and (1) qt of salsa together until chicken is done and it is good and HOT! When this is done you are ready to begin the casserole style enchilada...start by lining the bottom of a 13x9 dish with the corn tortillas then add some chicken mix, then line corn tortillas, chicken mix etc. until the dish is full up(kind of like lasagna style stacking)....put the dish in the oven and when the dish is bubbling this is when you add the last bit of ingredients (1) qt of salsa spread over the top and then add the cheese on top of this...shove back in the oven and bake a bit more until the cheese is melted. When this is done pull it out of oven and let sit for about 10 -15 mins.....Enjoy!!!
