Holy Mackerel! 75 lbs of tomatoes to work up for canning. Oh my goodness what did I do?! No worries...Jars are waiting in line to get their fill! Wahoo! Next few days are going to be busyyyy! Did I mention I hate car cleaning? I would rather pay somebody to clean our car than do it myself!! What makes it even worse is cleaning it on a hot Saturday.....Oh my lord! Crazy lady here cleaning the car! But now it smells tons better. We are not the best car caretakers. We clean our vehicles maybe twice a year. Oh I know, this will hurt some folks but they are a tool for us. We use them like farm rigs! They haul hay, grain, tools, us and once in awhile an animal or two! Most of the time, we clean the trash out because it can pile up and I hate that more! Today was the day to clean the FJ out! It was downright filthy! It is much better now but had to do it in shifts because of the heat (90's)! I hate that too because it draws the CHORE out! I did not however, give the outside a bath. It is tomato time which means canning time. 20 lbs. of tomatoes made 22 pints and a bit to snack on 😅 of salsa. I thought you might like my recipe.....play with it a bit to get the taste you desire. I start with Mrs. Wages The instructions call for 17 lbs. of tomatoes, 1 1/3 cups of vinegar added to the seasonings. 1. My process is wash jars, rings and lids. about two dozen pints , find extra large pot 2. Rinse tomatoes, about 10 jalapenos, 2 extra large onions(cut) 3. add a small amount of oil in pan 4. add cut onion (diced) and jalapenos (diced) 5. cook until onion is translucent 6. add mrs.wages and vinegar 7. add tomatoes (core tomato, cut in half then slice and dice) 8. stir all together 9. as the mix cooks (tomatoes soften) use old fashion potato masher to break it up until it is saucy. 10. get this mix to a good boiling point. stir regularly. Saturday we left the farm and went for a drive. Usually pack the car with the essentials for a day trip and off we go to wherever the FJ will take us! We landed at Crane Lake. It was 100 acre lake before 2015. The dam broke and they let water out to repair it so now it is about 40-50 acres. It was still beautiful! We hiked a little bit but we are to understand that it has a hiking trail that is about 5 miles long. We will go back to make that hike probably with the horses. I wonder what made this burrow in the middle of the tree? hmmmm We then hopped in the car and away we went to finish our trip. Went past Glover were they had the last lead smelter in the states.
