Candy Onions-Canned

 Lenny's Onions Recipe

 6.5 lbs sweet onions 2 green peppers 3 peeled garlic cloves, thin sliced or diced I ran the first two ingredients through a food processors with a thin slice. (*this step strictly optional*)Combine the three ingredients together cover with 1/3 C of pickling/canning (no iodine) salt. Let sit overnight. Rinse really good... In a large pot (enough to hold the first three ingredients and the following)add: 5 cups of sugar 3 cups of vinegar 1 1/2 tsp. turmeric 1 1/2 tsp. celery seed 2 TBsp. mustard seed Heat up until a soft boil then add onion mix...stir thoroughly. Bring to a boil all the while continue occasional stirring. Once you see boiling with all the ingredients turn down to a simmer. About 15 min mark you should see changes happening with the onions...about 30 min mark onions should be translucent...if not, continue simmer until they are. While you are waiting get your jars, lids and screw tops ready. Get your water bath ready too. Once mixture is complete, turn off and start filling jars, apply lids and place in water bath canner for 10 mins (this means a soft boil for 10 mins under water(jars are covered in water)) Depending on the size of jars will determine how much you should get!
